摘要
自农业部提出马铃薯主粮化战略后,马铃薯产业化发展得到了各个食品加工产商的重视,许多加工产商依赖现有的技术,能够以各种方式加工各类马铃薯制品。马铃薯现面临生产面积和产量不断增加,供过于求的现状,造成这种状况主要原因之一是:大部分马铃薯还是以鲜食为主,加工产品单一,加工技术有待进一步的提高[1]。实现马铃薯的理想去皮是推动马铃薯深加工发展的重要一步,马铃薯理想的去皮是指只去除掉马铃薯最外层薄薄的一层皮,但目前现有的去皮方式很难达到这一步。不同的马铃薯制成品对马铃薯去皮程度的要求也不一,导致我们所使用的去皮方式也不一样,有的情况是要求马铃薯去皮后不能够看到任何芽眼,表皮应该要整洁;有的对去皮后产品外表无要求。现有的去皮方式主要包括蒸汽去皮、碱性溶液去皮、摩擦去皮、人工去皮。
本主要详细介绍和探讨了马铃薯的各种去皮方式,通过对几种去皮方式进行优缺点的对比(如对其去皮效率、去皮机的适用性、机器成本和对制成品的影响),选择一种合适的去皮方式,设计一种适合小型食堂适用的马铃薯去皮机。

Design Peeling Machine
Abstract
Since the Ministry of Agriculture put forward the potato main grainization strategy, the industrialization development of potatoes has been paid attention to by various food processors. Many processors rely on existing technology to process various potato products in various ways. Potatoes are now facing a situation of increasing production area and production, and the supply exceeds demand. One of the main reasons for this situation is that most potatoes are still mainly fresh food, the processing product is single, and processing technology needs to be further improved. Realizing the ideal peeling of potatoes is an important step to promote the deep processing and development of potatoes. The ideal peeling of potatoes refers to the removal of only one thin layer of skin from the outermost layer of potatoes, but the current peeling method is difficult to achieve this point. Different potato products have different requirements for potato peeling, resulting in different peeling methods. Some require that potatoes should not see any buds after peeling, and the epidermis should be neat; some have no requirements for the appearance of the products after peeling. The existing peeling methods mainly include steam peeling, alkaline solution peeling, friction peeling, and artificial peeling.
This paper mainly introduces and discusses various peeling methods of potatoes in detail. By comparing the advantages and disadvantages of several peeling methods (such as its peeling efficiency, the applicability of the peeling machine, the cost of the machine and the impact on the finished product), choose a suitable peeling method and design a potato peeling machine suitable for small canteens.
